INTRODUCTION

  • Background to the Study

Food technology as an educational discipline is increasingly shaping how students interact with food, nutrition, and science-related concepts. In senior secondary schools, particularly in urban centers such as Lagos State, the integration of food technology into the Food and Nutrition curriculum is contributing to more practical and experiential learning. According to Onuorah (2019), food technology education allows students to engage with real-life food processing and preservation techniques, thereby improving their understanding of nutritional content, hygiene practices, and dietary needs. Through the use of modern tools, multimedia resources, and laboratory experiences, students develop both theoretical knowledge and hands-on skills, enhancing their academic engagement and performance.

Furthermore, research has shown that food technology stimulates student interest and creativity in Food and Nutrition subjects. Akinlade and Ojo (2021) observe that students exposed to food technology methods tend to demonstrate higher motivation and cognitive engagement compared to their peers in conventional classroom settings. The use of simulations, video demonstrations, and digital platforms like virtual labs supports visual and experiential learning. These technologies help to simplify complex food science concepts and provide contextual examples that students can relate to, thus reinforcing knowledge retention and application.

The pedagogical value of food technology in enhancing students’ performance has also been emphasized in curriculum development literature. Nwachukwu and Adeyemi (2020) highlight that incorporating food technology into senior secondary school learning improves problem-solving, teamwork, and critical thinking skills among students. The role of trained educators in the successful application of food technology cannot be overstated. Teachers who are proficient in food science tools and digital technology tend to deliver more engaging and effective lessons. As Ogundele (2021) notes, professional development and in-service training in food technology and pedagogy are critical for improving instructional quality. Teachers equipped with these skills can better facilitate student-centered learning, monitor individual progress, and provide feedback that enhances learning outcomes in Food and Nutrition classes.

In conclusion, food technology holds significant potential for enhancing students’ learning in Food and Nutrition at the senior secondary school level in Lagos State. Its impact is evident in improved student engagement, practical skill acquisition, and academic achievement. However, its effectiveness is contingent upon adequate infrastructure, teacher training, and government support. To maximize its benefits, policymakers and educational stakeholders must invest in technology integration, curriculum updates, and capacity building initiatives targeted at Food and Nutrition education.

  • Statement of the Problem

In the 21st century, education has increasingly embraced technological innovations to improve the quality and effectiveness of teaching and learning. Despite the global shift towards integrating technology into classrooms, the Food and Nutrition subject in many Nigerian senior secondary schools still faces challenges in adopting food technology as an instructional tool. This gap is particularly evident in Lagos State, where some schools are advancing with modern teaching techniques while others still rely on outdated, theory-heavy approaches that fail to engage students or build practical skills. Consequently, the disparity in learning experiences raises concerns about the preparedness of students to apply food and nutrition knowledge in real-life situations.

Food and Nutrition as a subject requires not only theoretical understanding but also hands-on experiences that reflect real-world applications. However, many students in Lagos State are taught using chalk-and-talk methods, without access to technological tools such as food processing equipment, audiovisual materials, and simulation software. This limitation reduces their ability to understand the scientific principles behind food preservation, nutrition analysis, and kitchen safety. As a result, students may struggle to connect classroom knowledge with actual food handling and nutrition practices, thereby weakening the educational impact of the subject.

Additionally, the lack of food technology integration may negatively affect student engagement and academic performance. In a digital era where students are more inclined to learn through interactive and visual platforms, the absence of technological support in Food and Nutrition classes can result in reduced interest, low motivation, and limited creativity. Students who are not actively engaged are less likely to retain knowledge or perform well in both internal and external examinations. This situation raises a major concern about the effectiveness of current teaching methods in equipping students with relevant skills and knowledge for both higher education and the job market.

Moreover, the uneven distribution of technological resources across schools in Lagos State highlights an issue of inequality in learning opportunities. While some private or well-funded public schools may have access to food laboratories and digital learning tools, many government-run schools lack these basic resources. This imbalance leads to unequal learning outcomes among students from different socioeconomic backgrounds. It also poses a challenge to the implementation of the national curriculum which calls for more practical and student-centered learning, especially in vocational subjects like Food and Nutrition.

Another problem lies in the lack of professional development opportunities for teachers in the area of food technology. Many educators have limited or no training in using technological tools to enhance Food and Nutrition instruction. This skills gap not only affects the quality of teaching but also limits the potential benefits students can gain from food technology. Without proper training, even schools with available resources may fail to effectively implement them, thereby undermining the overall learning experience.

In summary, the limited integration of food technology into the teaching of Food and Nutrition in senior secondary schools in Lagos State poses a significant challenge to student learning. 1.3. Aim and Objectives of the Study

The aim of the study is to examine Impact of food technology on students learning: effect on food nutrition students in senior secondary school in Lagos State. The specific objectives are:

  1. To examine the extent to which food technology is integrated into the teaching of Food and Nutrition in senior secondary schools.
  2. To assess the impact of food technology on students’ understanding and performance in Food and Nutrition.
  3. To identify the challenges faced by teachers and students in using food technology in the classroom.
  4. To determine students’ interest and engagement levels when food technology tools are used in teaching.

The hypothetical statement of the study is buttressed below:

Ho: Food technology has no significant impact on students’ understanding and performance in Food and Nutrition.

H1: Food technology has significant impact on students’ understanding and performance in Food and Nutrition.

 

1.6. Significance of the Study

This study is significant as it provides insight into how food technology influences the learning outcomes of students studying Food and Nutrition in senior secondary schools. In today’s technology-driven world, the integration of digital tools and modern food science techniques into classroom instruction has become essential. This research will help stakeholders in the education sector understand the importance of modernizing the Food and Nutrition curriculum to align with technological advancements and global best practices. By exploring the impact of food technology on student learning, the study will contribute to the development of more effective teaching methods that foster both academic excellence and practical skill acquisition.

Secondly, the study will benefit teachers of Food and Nutrition by highlighting the value of integrating food technology into their teaching practices. Many teachers are not adequately trained or exposed to technological tools that can enhance lesson delivery and student engagement. Through this research, educators will become more aware of the advantages of using food labs, multimedia resources, and hands-on activities that improve students’ comprehension and retention of key concepts. 1.7. Scope of the Study

The study examines the Impact of food technology on students learning: effect on food nutrition students in senior secondary school in Lagos State. The study is limited to five selected Secondary Schools in Yaba, Lagos.

 

1.8. Operational Definition of Terms

  1. Impact: Impactrefers to the overall influence or effect that one factor has on another. In this study, it denotes the extent to which food technology affects students’ academic performance, understanding, interest, and engagement in Food and Nutrition classes.
  2. Food Technology: Food technologyis the application of scientific knowledge, tools, and processes to the handling, preparation, preservation, and presentation of food. In the educational context, it includes using equipment, digital tools, and practical methods to teach food science and nutrition.
  3. Students’ Learning: Students’ learningrefers to the process through which students acquire knowledge, skills, values, and attitudes. It includes both cognitive (understanding concepts), affective (interest and motivation), and psychomotor (practical skills) aspects of learning.
  4. Effect: Effectrefers to the result or outcome caused by a particular action or condition. In this case, it points to the changes observed in students’ academic and practical performance due to the use of food technology in teaching.
  5. Food and Nutrition: Food and Nutritionis a subject taught in schools that deals with the study of food composition, nutrients, dietary needs, food preparation, and hygiene. It equips students with knowledge about healthy eating, food safety, and practical cooking skills.
  6. Students: Studentsare learners or individuals enrolled in a school or academic institution. In this study, it specifically refers to those studying Food and Nutrition in senior secondary schools.
  7. Senior Secondary School: Senior secondary schoolrefers to the final stage of secondary education in Nigeria, typically including students from SS1 to SS3 (ages 15–18). It prepares students for tertiary education or vocational careers.
