INTRODUCTION
- Background to the Study
Street-vended foods have become an integral part of the urban food system in many developing countries, including Nigeria. They provide affordable, accessible, and culturally familiar meals for millions of urban dwellers, especially workers, students, and traders who spend long hours away from home (Mensah, Yeboah-Manu, Owusu-Darko, & Ablordey, 2002). In Kano metropolis, roadside food vending is particularly vibrant, reflecting the city’s commercial importance and its diverse population. These vendors contribute not only to food security but also to employment generation and poverty alleviation, as many families depend on vending as a primary source of income. Despite these socio-economic benefits, the safety and hygiene of street-vended foods have become a major concern to public health authorities.
The value of street-vended foods is often undermined by poor hygiene practices in food preparation, storage, and sale. Vendors frequently operate in informal, open-air environments where access to potable water, waste disposal, and proper sanitation facilities is limited. Such conditions expose food to contamination from dust, flies, sewage, and human handling. The World Health Organization (WHO, 2015) has consistently emphasized that poor food handling and inadequate personal hygiene are major causes of foodborne diseases worldwide. The risks are amplified in densely populated areas such as Kano metropolis, where consumer demand for roadside meals is high and hygiene practices are not always rigorously followed.
Globally, foodborne diseases (FBDs) account for millions of illnesses and thousands of deaths annually, with the burden disproportionately borne by low- and middle-income countries (WHO, 2015). Sub-Saharan Africa is among the regions with the highest incidence of FBDs, often linked to microbial contamination of food and water. Street-vended foods, although economically important, are frequently implicated in outbreaks of diarrheal diseases, typhoid fever, cholera, and other gastrointestinal infections (Mensah et al., 2002). These diseases carry high social and economic costs, including loss of productivity, medical expenses, and in severe cases, mortality, particularly among children and immunocompromised individuals.
In Nigeria, evidence shows that many street food vendors have limited knowledge of food hygiene and safety standards. Omemu and Aderoju (2008), in a study conducted in Abeokuta, found significant gaps in food safety knowledge and practices among street vendors, with many failing to implement basic measures such as handwashing, use of protective clothing, and safe storage of perishable foods. Similar findings have been reported across other Nigerian cities, suggesting a widespread challenge in food safety compliance. These gaps highlight the need for systematic interventions to improve food hygiene awareness and enforcement among food vendors nationwide.
Kano metropolis, the commercial nerve center of Northern Nigeria, presents a unique case for studying food hygiene among street vendors. The city is home to bustling markets, educational institutions, transport hubs, and industrial zones, all of which attract large numbers of people who rely on roadside meals daily. Despite their popularity, studies indicate that food vendors in Kano still face challenges in maintaining high hygiene standards (Ibrahim, 2023). While many are aware of the importance of personal hygiene, practices such as covering food, washing utensils with clean water, and proper waste disposal remain inconsistently applied. This inconsistency raises concerns about public exposure to preventable foodborne hazards.
Several factors influence hygiene practices among food vendors. These include educational background, training in food safety, availability of clean water, waste management infrastructure, and the extent of regulatory oversight (Okojie & Isah, 2014). Economic constraints also play a role; many vendors operate on thin profit margins and may prioritize cost-saving measures over compliance with hygiene standards. Additionally, weak enforcement of existing food safety regulations contributes to the persistence of unhygienic practices in the informal food sector (Onyeaka, 2021). Without targeted interventions, the cycle of poor practices and foodborne disease outbreaks is likely to persist.
Another critical factor in food safety is the vendors’ level of knowledge regarding food hygiene principles. Knowledge does not always translate into practice, as socioeconomic and infrastructural barriers may limit the ability of vendors to apply what they know. For example, a vendor may be aware of the need to wash hands with soap and clean water but may not have access to these resources in the vending environment. Similarly, awareness of the dangers of cross-contamination may not prevent it if vendors lack adequate utensils or storage facilities. Thus, understanding the relationship between knowledge and practice is essential to designing effective interventions.
The public health significance of food hygiene among street vendors in Kano cannot be overstated. With thousands of people depending on these vendors daily, lapses in hygiene can have far-reaching consequences for the health of the population. Outbreaks of foodborne diseases strain already limited healthcare resources and undermine confidence in the urban food system. Furthermore, poor hygiene practices among food vendors can perpetuate cycles of poverty, as illness reduces productivity and increases healthcare costs for both vendors and their customers. Addressing these challenges is therefore a matter of both public health and economic sustainability.
Improving food hygiene practices among roadside vendors requires a multifaceted approach. Education and training programs can enhance knowledge and awareness, but these must be supported by improved access to basic sanitation facilities, water supply, and waste management services. Strengthening regulatory frameworks and inspection regimes is also vital to ensure compliance with food safety standards. Moreover, interventions must be culturally sensitive and economically feasible to ensure acceptance and sustainability among vendors. Collaboration between government agencies, non-governmental organizations, and community associations can create a supportive environment for safer street food vending.
In light of these considerations, this study seeks to assess the current status of food hygiene knowledge and practices among roadside food vendors in Kano metropolis. By identifying gaps and exploring the relationship between what vendors know and what they actually practice, the research will provide evidence to guide targeted interventions. Ultimately, the goal is to enhance the safety of street-vended foods, reduce the burden of foodborne diseases, and protect public health while preserving the socio-economic benefits of this vital sector in Kano State.
1.2. Statement of the Problem
Roadside food vending has become a critical component of the food supply chain in Kano metropolis, meeting the dietary needs of thousands of residents daily. While the sector plays an important socio-economic role, research has shown that safe food handling and storage practices are not consistently adhered to among many vendors (Ibrahim, 2023; Okojie & Isah, 2014). The informal nature of this sector often means that vendors prepare and sell food under conditions that fall short of recommended hygiene standards. This situation creates an environment where food contamination can easily occur, thereby posing health risks to consumers.
One major concern is the contamination of food with bacterial, viral, and parasitic agents that thrive in unsanitary environments. Poor practices such as inadequate handwashing, use of unclean utensils, failure to cover food, and improper waste disposal contribute significantly to the spread of foodborne pathogens. These lapses result in the prevalence of diarrhoeal diseases, typhoid fever, and other gastrointestinal infections that are common in Kano State. Vulnerable populations, particularly children, the elderly, and those with weakened immune systems, are disproportionately affected, leading to a significant public health burden (WHO, 2015).
Compounding the problem is the weak enforcement of regulatory frameworks that are designed to safeguard food safety. Although policies exist mandating vendor registration, routine medical screening, and periodic inspections, implementation has remained inconsistent. Many food vendors in Kano metropolis operate without formal certification or oversight, which makes it difficult for health authorities to monitor their compliance with hygiene standards. This lack of regulatory enforcement undermines food safety initiatives and allows unsafe practices to persist unchecked.
Furthermore, while there is a growing body of research on food hygiene in Nigerian cities such as Abeokuta, Lagos, and Benin (Omemu & Aderoju, 2008; Okojie & Isah, 2014), there is limited empirical evidence that specifically addresses the unique context of Kano metropolis. Considering the city’s size, cultural diversity, and its role as a major commercial hub in northern Nigeria, it is critical to generate location-specific data. Without current and context-relevant findings, policymakers and public health professionals in Kano lack the necessary evidence base to design interventions tailored to the realities of roadside food vending in the metropolis.
Another dimension of the problem is the gap between knowledge and practice among food vendors. Even where some vendors demonstrate awareness of basic food hygiene principles, socioeconomic pressures, infrastructural constraints, and lack of access to clean water or proper waste disposal often prevent the translation of knowledge into practice. This disconnect highlights the importance of assessing not just what vendors know, but also what they do in their day-to-day operations. Understanding this relationship is essential for developing interventions that are both practical and sustainable.
In view of these challenges, this study seeks to fill the knowledge gap by systematically assessing the food hygiene knowledge and observed practices of roadside food vendors in Kano metropolis. By testing the relationship between knowledge and practice, the research will generate evidence that can inform public health policies, training programs, and enforcement strategies. Ultimately, the study aims to contribute to improved food safety standards, reduced incidence of foodborne diseases, and better protection of public health in Kano State.
1.3. Aim and Objectives of the Study
The aim of the study is to assess food hygiene knowledge and food handling practices among roadside food vendors in Kano metropolis, Kano State.
Specific objectives

The hypothetical statement of the study is buttressed below:
H₀: There is no significant relationship between food hygiene knowledge and observed food handling practices among roadside food vendors in Kano metropolis.
H₁: There is a significant relationship between food hygiene knowledge and observed food handling practices among roadside food vendors in Kano metropolis.
1.6. Significance of the Study
This study is significant because it will generate up-to-date, location-specific evidence on the food hygiene knowledge and practices of roadside food vendors in Kano metropolis. While street food vending has been widely studied in other parts of Nigeria, there is a dearth of systematic research focusing on the northern region, particularly Kano State. As one of the largest urban centers in Nigeria, Kano is characterized by a high population density, vibrant markets, and widespread dependence on street-vended foods. Findings from this research will therefore provide contextually relevant data that can guide interventions aimed at safeguarding public health in this critical setting.
For public health authorities and regulatory agencies in Kano State, the results of this study will serve as an evidence base for designing and implementing effective policies. Specifically, the findings can inform the scheduling of vendor inspections, the structure of medical certification procedures, and the development of training modules tailored to the needs of roadside vendors. By identifying knowledge gaps and unsafe practices, policymakers will be better positioned to allocate resources more effectively and to prioritize interventions that directly address the most pressing challenges in food safety management.
The study will also be valuable to non-governmental organizations (NGOs) and development partners working in the areas of food safety, nutrition, and livelihoods. Many NGOs engage in programs designed to improve community health, empower informal workers, and promote sustainable urban food systems. Evidence from this study will enable such organizations to design interventions that are practical, context-sensitive, and culturally acceptable. For instance, NGOs could use the findings to support hygiene training workshops, introduce affordable technologies for food preservation, or provide low-cost handwashing facilities for roadside vendors.
Equally important, the study has direct benefits for the vendors themselves. By highlighting specific gaps in their knowledge and practices, the research can provide feedback that vendors can use to improve their day-to-day operations. Vendors who adopt safer practices not only protect their customers but also enhance their own business sustainability by building trust and attracting repeat customers. For students and researchers, the findings will provide a reference point for further studies on food hygiene, informal economies, and urban public health. It may also inspire comparative studies across different regions of Nigeria, thereby broadening the understanding of regional variations in food safety practices.
Finally, the significance of this research extends to society at large. Ensuring safer food practices among roadside vendors reduces the incidence of foodborne illnesses, which in turn lowers healthcare costs, minimizes productivity losses, and improves overall quality of life for residents of Kano metropolis. Safer food also strengthens consumer confidence in the urban food system, making street-vended foods a more reliable component of food security. In this way, the study aligns with broader national and global goals of promoting public health, reducing poverty, and ensuring access to safe, nutritious food for all.
1.7. Scope and Limitation of the Study
This study is limited to roadside food vendors operating within Kano metropolis. It will assess knowledge (via structured questionnaire) and practice (via direct observation using a checklist) at the point of sale. Microbiological testing of food samples and customers’ health outcomes are beyond the scope of the current study but are recommended for future research. Potential limitations include response and observation biases (vendors may alter behaviour when observed) and logistical constraints in accessing vendors clustered in very busy or informal locations. The study will mitigate these limitations by using validated questionnaires, unobtrusive observation techniques, and a sampling strategy designed to capture diverse vending sites across the metropolis.
1.8 Definition of Terms
Food Hygiene: Refers to all conditions and measures necessary to ensure the safety and suitability of food at all stages of the food chain, from production to consumption. It includes practices that prevent contamination, promote cleanliness, and reduce the risk of foodborne illness (WHO, 2015).
Food Hygiene Knowledge: The level of awareness and understanding a food vendor has about principles and practices that reduce food contamination risks. This includes knowledge of personal hygiene, safe food storage, proper cooking temperatures, prevention of cross-contamination, and waste management.
Food Hygiene Practices: The actual behaviors and actions carried out by food vendors during the preparation, handling, storage, and sale of food. These practices reflect whether or not vendors apply their knowledge in real-life settings. Examples include handwashing with soap, covering prepared food, using clean utensils, and proper waste disposal.
Roadside Food Vendors: Individuals or groups who prepare, cook, and sell ready-to-eat meals along roadsides, in markets, or other informal public spaces outside of established restaurants. They often operate with limited infrastructure and provide affordable meals to the urban population (Okojie & Isah, 2014).
Foodborne Diseases (FBDs): Illnesses caused by the consumption of food contaminated with harmful microorganisms (such as bacteria, viruses, or parasites), toxins, or chemicals. Common examples in Nigeria include diarrheal diseases, cholera, typhoid fever, and food poisoning (WHO, 2015).
Kano Metropolis: The urban and peri-urban area of Kano State, comprising Kano Municipal, Nassarawa, Gwale, Tarauni, Fagge, and parts of other surrounding local government areas. It is the commercial hub of northern Nigeria and has a high concentration of roadside food vending activities.
Food Safety: A broader concept that encompasses food hygiene, referring to the assurance that food will not cause harm to consumers when it is prepared, served, or eaten as intended. It involves preventing hazards and ensuring quality throughout the food supply chain (FAO/WHO, 2019).
Personal Hygiene: The set of practices performed by food handlers to maintain cleanliness and minimize contamination risks. This includes washing hands before handling food, wearing clean clothing, trimming fingernails, and covering hair during food preparation.
Organization of the Study
This thesis is organized into five chapters. Chapter One provides the introduction, background, problem statement, objectives, hypothesis, significance, scope and definitions. Chapter Two reviews relevant literature on street-vended foods, food hygiene knowledge and practice and theoretical frameworks. Chapter Three describes the methodology including study design, population, sampling, instruments and data analysis procedures. Chapter Four presents data, analysis and findings. Chapter Five discusses conclusions, policy implications, recommendations and areas for further research.
