INTRODUCTION
1.1 Background of the Study
Food safety is a major global public health concern, especially in developing countries where food preservation, storage, and distribution systems are often inadequate. Agricultural produce such as fruits, vegetables, grains, and fresh meat are highly perishable and provide an ideal environment for the growth of microorganisms when not properly handled. These food items are essential components of the Nigerian diet, but their high moisture content and nutrient richness make them highly susceptible to contamination by foodborne pathogens.
Foodborne pathogens such as Escherichia coli, Salmonella spp., Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus, and various fungi are commonly associated with spoilage and foodborne diseases. These microorganisms can be introduced into food through contaminated soil, irrigation water, improper handling, poor sanitation, and inadequate storage conditions. Once present, they can multiply rapidly under favorable environmental conditions, leading to food spoilage and serious health risks.
In Nigeria, the handling and storage of agricultural produce often take place in informal and poorly regulated environments such as open markets, warehouses, and distribution centers. One of the key regulatory bodies responsible for ensuring food safety in Nigeria is the National Agency for Food and Drug Administration and Control (NAFDAC). The agency is mandated to regulate and monitor food quality to ensure that only safe and wholesome food products reach consumers. In many storage facilities and markets across Lagos, including warehouses and distribution points, agricultural produce is exposed to dust, rodents, insects, contaminated water, and unclean handling practices. Inadequate refrigeration and poor ventilation further worsen the situation, allowing microorganisms to multiply rapidly. As a result, stored produce becomes a potential vehicle for transmitting foodborne pathogens to consumers.
Research evidence has shown that food samples from Nigerian markets are frequently contaminated with pathogenic bacteria such as E. coli, Salmonella, and Staphylococcus aureus, which are responsible for various foodborne illnesses. However, despite these findings, there is still limited updated, location-specific data focusing on the isolation and identification of pathogens specifically in stored agricultural produce under NAFDAC-regulated environments in Lagos State.
Another major issue is the inconsistency in compliance with food safety standards among storage operators. While NAFDAC provides guidelines for food handling, storage, and distribution, enforcement gaps still exist, leading to continued exposure of food products to contamination risks. This creates uncertainty about the actual effectiveness of regulatory control in reducing microbial hazards in stored agricultural produce.
Furthermore, foodborne disease cases in Nigeria are often underreported or misdiagnosed, making it difficult to fully assess the burden of contamination-related illnesses. Consumers continue to rely heavily on stored agricultural produce due to its affordability and availability, despite potential health risks.
The core problem, therefore, is the lack of comprehensive empirical evidence on the types and levels of foodborne pathogens present in stored agricultural produce and the associated public health implications within the regulatory framework of NAFDAC in Lagos State.
This study seeks to bridge this gap by isolating and identifying foodborne pathogens in stored agricultural produce and evaluating their public health significance.
1.3 Objectives of the Study
The main objective of this study is to isolate and identify foodborne pathogens in stored agricultural produce and assess their public health implications in Lagos State under the supervision of NAFDAC.
Specific Objectives:
- To determine the types of microorganisms present in stored agricultural produce.
- To isolate and identify common foodborne pathogens in selected samples.
- To assess the level of microbial contamination in stored agricultural produce.

1.6 Significance of the Study
