Project – The Effect of Post-Harvest Storage Practices on the Quality of Maize: A Study of Smallholder Farmers in Kaduna State

CHAPTER ONE

INTRODUCTION

1.1 Background to the Study

Maize (Zea mays L.) is one of the most widely cultivated cereal crops in the world and serves as an important source of food, animal feed and industrial raw material. In Nigeria, maize is consumed in different forms and contributes to household food security, farmers’ income and the supply of raw materials to agro-processing industries. Its importance extends beyond production because the quality of maize after harvesting influences its market value, suitability for consumption, storage life and processing potential. However, harvesting does not mark the end of activities that determine the quality of the crop. Post-harvest operations, particularly drying, shelling, handling and storage, can either preserve the quality of maize or expose it to deterioration. Kitinoja, Dandago and Abdullahi (2019) identified improper drying, inadequate storage, handling damage and other post-harvest weaknesses as important causes of maize losses in Nigeria. This makes post-harvest storage an important aspect of maize production and food security.

Post-harvest storage practices refer to the methods and procedures used to preserve harvested maize before it is consumed, processed or sold. These practices include drying maize to a suitable moisture level, sorting and removing damaged grains, cleaning storage facilities, selecting appropriate storage structures, protecting maize from pests and moisture, and regularly inspecting stored produce. Storage may involve traditional granaries, cribs, sacks, warehouses, silos or hermetic storage systems. The effectiveness of these methods depends on the condition of the grain at the time of storage and the ability of the storage environment to prevent moisture absorption, insect infestation, rodent damage and fungal growth. The Food and Agriculture Organization (FAO, n.d.) explains that maize deterioration during storage may result from biological and environmental factors, including insects, microorganisms, rodents and unsuitable storage conditions. Appropriate storage practices are therefore essential for maintaining grain quality and reducing post-harvest losses.

The quality of maize can be assessed through several physical, biological, chemical and safety-related characteristics. Physical quality includes grain colour, size, uniformity, cleanliness, broken kernels and visible damage. Biological quality may involve insect infestation, mould growth and the presence of other organisms that reduce the acceptability or usability of the grain. Chemical and food-safety quality may include moisture content, nutrient preservation and contamination by substances such as mycotoxins. Storage conditions can affect these characteristics in different ways. For example, high moisture levels and inadequate ventilation can encourage fungal growth, while insect activity can cause holes, powdering, broken kernels and weight loss. The FAO’s technical material on maize processing and storage identifies moisture and temperature management as important for limiting deterioration and microbial growth, and notes that fungal contamination can have both economic and health consequences because of mycotoxins such as aflatoxins.

One of the major threats to stored maize is infestation by insects and other storage pests. Insects can feed on kernels, reduce grain weight, damage the seed structure and create conditions that make the grain more vulnerable to further deterioration. Rodents may consume or contaminate stored maize, while moulds may develop where grain is stored under unsuitable moisture and temperature conditions. Udoh, Cardwell and Ikotun (2000), in their study of maize storage structures and aflatoxin contamination across five agroecological zones of Nigeria, found that storage in bags was common and that farmers identified insect infestation, fungal attack and rodents as major storage problems. Their study also reported that farmers who experienced insect problems were more likely to have aflatoxin detected in their stored maize. These findings demonstrate that storage practices and pest management are important considerations in preserving both the physical quality and safety of maize.

In addition to physical deterioration, poor storage conditions may contribute to contamination by mycotoxins, including aflatoxins produced by certain fungi. Aflatoxin contamination is a food-safety concern because exposure through contaminated food can pose risks to human and animal health. The occurrence and level of contamination may be influenced by several interacting factors, including moisture, temperature, damaged kernels, fungal presence and the duration of storage. Ware (FAO, n.d.) identifies moisture, temperature, time, damaged kernels and the presence of toxin-producing fungi as important factors in aflatoxin development in food grains. This means that effective storage management should not be limited to preventing visible grain loss; it should also aim to reduce conditions that encourage fungal growth and toxin production. Maintaining appropriate moisture levels, preventing grain damage and keeping storage areas clean can therefore contribute to improved maize quality and food safety.

The issue is particularly relevant to Nigeria, where maize is stored and marketed through diverse systems that may differ in their ability to protect grain quality. In a commodity-system assessment involving Nigeria, Rwanda and Punjab, India, Dandago, Kitinoja and Gwangwazo (2021) examined post-harvest handling, storage and marketing practices and identified drying, sorting, handling and storage as important points at which losses occur. The assessment reported that maize in Nigeria could be stored for several months and that damage and defects were among the factors affecting quality along the value chain. In another Nigerian study, Kitinoja, Dandago and Abdullahi (2019) identified improper drying and inadequate storage among the factors contributing to maize post-harvest losses. These studies indicate that storage quality is linked to broader post-harvest management practices and that improvements may require both better facilities and appropriate handling knowledge among farmers.

Kaduna State is an important agricultural area in northern Nigeria, and the quality of maize stored by smallholder farmers has implications for household food supply, income generation and local markets. Evidence from Kaduna State has demonstrated that aflatoxin contamination in marketed maize is a relevant food-safety concern. Olaitan et al. (2024), in a study of maize grains sold in five major markets in the state, reported aflatoxin levels ranging from 6.53 ± 0.7 μg/kg to 60.87 ± 1.87 μg/kg in sampled grains. The authors noted that the maize had been stored in sacks for approximately nine to eleven months before marketing and discussed poor storage practices, awareness and weather conditions as possible factors associated with contamination. Although market-based findings do not establish the storage practices of every smallholder farmer in Kaduna State, they demonstrate the importance of examining how maize is stored and how those practices may affect grain quality. Against this background, the present study focuses on the effect of post-harvest storage practices on the quality of maize among smallholder farmers in Kaduna State.

1.2 Statement of the Problem

Maize is an important food and commercial crop, but its quality may deteriorate after harvesting when drying, handling and storage are not properly managed. Poor storage conditions can expose grain to moisture, insects, rodents and fungal growth, resulting in physical damage, weight loss, reduced market value and possible food-safety problems. The FAO identifies insects, microorganisms and vertebrate pests among the agents responsible for post-harvest deterioration and emphasizes that storage losses depend on the crop, storage environment and management practices. Therefore, even when farmers achieve satisfactory yields, inadequate storage may reduce the quantity and quality of maize available for household consumption and sale.

A further concern is that some forms of deterioration may not be easily recognized through visual inspection. Maize that appears suitable for consumption may still be affected by fungal contamination or mycotoxins, while insect damage and moisture problems can reduce grain quality over time. Udoh, Cardwell and Ikotun (2000) documented insect infestation, fungal attack and rodent damage as common storage problems reported by Nigerian farmers, and found an association between reported insect problems and the detection of aflatoxin in stored maize. Such findings show that post-harvest storage problems can affect not only the physical appearance and quantity of grain but also its safety and suitability for consumption.

The concern is particularly relevant in Kaduna State, where research on maize sold in major markets has identified aflatoxin contamination in sampled grains. Olaitan et al. (2024) reported that aflatoxin levels varied across the sampled markets and that some samples exceeded the Nigerian permissible limit cited by the researchers. The study also indicated that maize had been stored in sacks for several months before sale. Although these results relate to market samples and cannot automatically be generalized to all smallholder farmers or storage facilities in the state, they raise questions about the storage conditions under which maize is kept and the extent to which farmers’ practices protect grain quality.

Despite the importance of maize to farmers and consumers, there is a need for localized information on the storage methods adopted by smallholder farmers in selected areas of Kaduna State and how these practices relate to maize quality. It is necessary to examine practices such as drying, sorting, choice of storage structure, pest control, moisture protection, sanitation and inspection, alongside quality indicators such as visible damage, insect infestation, mould, cleanliness and perceived market acceptability. Research by Dandago, Kitinoja and Gwangwazo (2021) and Kitinoja, Dandago and Abdullahi (2019) shows that post-harvest handling and storage are important points of loss in the maize value chain, but further local investigation is required to understand the practices and constraints experienced by farmers in the selected study communities. This study therefore seeks to examine the effect of post-harvest storage practices on the quality of maize among smallholder farmers in Kaduna State.

1.3 Purpose of the Study

The main purpose of this study is to examine the effect of post-harvest storage practices on the quality of maize among smallholder farmers in Kaduna State.

1.4 Specific Objectives

The specific objectives of the study are to:

  1. identify the post-harvest storage practices adopted by smallholder maize farmers in the selected communities in Kaduna State;
  2. assess the quality of maize stored by smallholder farmers in the selected communities;
  3. examine the relationship between post-harvest storage practices and the quality of maize among the farmers; and
  4. identify the major challenges faced by smallholder farmers in adopting appropriate post-harvest storage practices.

1.5 Research Questions

The following research questions will guide the study:

  1. What post-harvest storage practices are adopted by smallholder maize farmers in the selected communities in Kaduna State?
  2. What is the quality of maize stored by smallholder farmers in the selected communities?
  3. What relationship exists between post-harvest storage practices and the quality of maize among the farmers?
  4. What are the major challenges faced by smallholder farmers in adopting appropriate post-harvest storage practices?

1.6 Research Hypothesis

The following null hypothesis will be tested at the 0.05 level of significance:

H₀: There is no significant relationship between post-harvest storage practices and the quality of maize among smallholder farmers in selected communities in Kaduna State.

1.7 Significance of the Study

The study will be significant to smallholder maize farmers because it will provide information on storage practices that may help preserve grain quality and reduce post-harvest deterioration. The findings may increase farmers’ awareness of the importance of appropriate drying, sorting, pest management, storage hygiene and protection from moisture.

The study will be useful to agricultural extension workers and development agencies because it may identify gaps in farmers’ storage knowledge and practices. The findings could support the design of extension messages, demonstrations and training programmes on improved maize storage and post-harvest management.

The study may also benefit agricultural and food-security policymakers, including relevant state and local authorities. Evidence on farmers’ storage practices and constraints may assist in planning interventions relating to improved storage facilities, access to appropriate technologies, farmer education and reduction of post-harvest losses.

Maize traders, processors and consumers may benefit indirectly from improved storage practices because preserving grain quality can support better marketability, processing suitability and food safety. The study may also help draw attention to the need to prevent deterioration and contamination before maize enters the market.

Finally, the study will contribute to academic knowledge on post-harvest management and maize quality in Nigeria. It may serve as a reference for students and researchers undertaking further studies on grain storage, post-harvest losses, food quality and smallholder agricultural practices.

1.8 Scope of the Study

The study will focus on the effect of post-harvest storage practices on the quality of maize among smallholder farmers in selected communities in Kaduna State.

The content scope will cover drying and preparation before storage, sorting and cleaning, storage structures and containers, pest control, protection against moisture, storage hygiene, inspection and duration of storage. Maize quality will be considered in terms of relevant indicators such as visible grain damage, insect infestation, mould or fungal signs, cleanliness, colour and other quality characteristics that can be assessed using the methods specified in the research methodology.

The geographical scope will be limited to the selected communities in Kaduna State. The study population will comprise smallholder maize farmers who meet the inclusion criteria established for the research.
